This recipe is dedicated to my dear friends Lisa & Brian who first introduced me to edibles. My famous first edible quote: "Brian who?" Don't ask. :) The evolution of these cookies for me has been enormous. First off, a buckeye cookie was my very first edible!!! Unknown to me at the time, edibles cookies are not always meant to be completely eaten at one time. We were heading to a U2 concert in Denver with some of our best friends and they shared some with us. They handed us two. Made sense because there were two of us, my husband and myself. Our seats weren't together so we parted ways and made our way to our perspective sections. As soon as we got into our seats, we popped our little yummies into our mouths and set forth to watch an epic concert. And that it was!!! Whoa! I'll spare you the details but it was too much! This is where my fascination with edibles was born. The "high" lasted about three hours (that was cool), but I wanted to figure out how these were made. The journey began from that point of canna-curiousness.

Cannabis Infusion:
When I make these yummies, I use one stick of canna-butter and one stick of regular butter. If you want really strong bars, use two infused canna-butter sticks. You get to control how potent you want your canna-butter before you decarb and make the butter
Another option would be to use coconut oil but because the dose of oil is low, the bars won't be as potent
A third option could be to infuse your heavy cream or your vanilla if you already have that made up
The Stuff You'll Need: 1 Cup of Peanut Butter OR Trader Joe's Cookie Butter (I use the crunchy version) 2 Cups of powdered sugar 5 Tablespoons of unsalted butter 2 Cups of semi sweet chocolate 2 teaspoons of coconut oil
Pay Attention to the Directions:
These cookies can sound tricky to make but they are not at all. A bit time consuming with the covering in chocolate part but not a big deal. I thought, instead of writing out the directions, I'd share the video that has helped me make these healthier and easier to create. One of my past recipes calls for a whole stick of butter AND four cups of powdered sugar. NO THANK YOU! I thought it might be fun and easier for you to watch this video by Preppy Kitchen
